The Bear from Princess and the Bear tried the new Tamal de Rajas, a poblano and corn tamale with poblano cream, cotija and queso fresco under a bundle of pea tendrils and micro cilantro. He said the poblano comes through clearly and in balance with the corn masa, and that the poblano cream adds pepper flavor rather than heat.
