Refreshing Palate Cleanser

The palate cleanser is pear sorbet with pear brandy poured from a bottle that has a whole pear grown inside it. Mammoth Club called it incredible: deep pear flavor and very refreshing, with the brandy adding brightness and a punch at the end. They wished the ice cream shop downstairs sold it as a dessert.

The palate cleanser between the fish and meat courses (the Trou Normand) was pear sorbet with a pour of strong pear brandy. The reviewer called it the best thing they ate that day: creamy sorbet with an amazing pear flavor and a brandy that is strong but smoother than the pear shots in Germany. They liked it so much the staff brought a second one.
