For Space 220's fifth anniversary Princess and the Bear started with the beet salad, which they ordered modified to be vegan: vegan cheese in place of the usual caramelized goat cheese, with the herb pesto. The Princess (vegan) said the caramelization on the cheese is to die for, that she orders it every visit whatever else is on the menu, and that even people who don't like beets will love it. It is always a 5 out of 5 for her. The Bear loved the earthy beets that melt in your mouth with the toasted cheese and also gave it 5 out of 5, calling it a must-get with either the vegan or the goat cheese.
